Good evening guys and gals. I have a question concerning proof. I have found that if I do not boil my grains, then my proof is higher coming out (130-140). If I boil my grains my proof is lower (80-100). I have been experimenting for about a year and I have gotten my mix to a flavor that all seem to enjoy regardless of proof. So, now I am at a…[Read more]

    • Might have to do with fermentable sugars.

    • You never want to boil your grain, rye and barley should be mashed under 173 degrees 145-165 is optimal. Corn need a higher temp so 180-200 it is mashed first then add your cereal grain when temps drop 150-160.

In reply to: playerwilson posted an update in the group Mash Recipes Hey guys I\'ve been running this recipe for awhile now that Mike gave me and it\'s a great recipe and easy. But now I want to add some different grains to it. I\'m using 20 lbs cracked corn 40 lbs of sugar and 20 gallon of water. What can I do to take this recipe to the next level. I just bought a new 20gal copper pot! So I figured new pot new recipe. And hopefully with this bigger pot I can control my heat alittle better. My 7 gallon I could never run under 190 so hopefully this bigger pot will help even everything out. The burner is 55000 btu, it\'s the smallest one I could find. Any advice or recipes would be greatly appreciated. Keep in mind I\'m wanting 2 do a sweet feed likker. Thx for your time and happy thanksgiving to everybody. View

This sounds pretty good. I have been wanting to try making some rum myself.

I use the same ratio and I adjust it from 10-20 gallon depending on how much time I have for running, I only have a 5 gal pot for now. This mix works great, run slow and steady. I have found that (for me) that the slower I run, the smoother it is. I recently purchased a 5 liter oak barrel, proofed down to 90 and filled the barrel. Going to let it…[Read more]
