    • I have a 100l Alembic pot Still and have run only 2 batches using beer in my still. Now I am making my first batch from scratch….made a whetted bourbon mash similar to Makers Mark. Problem is that in my mash tun I let it work overnite and the temp this morn was 102 in the mash tun and a cap of grain had formed on top and it was kinda dry. I pushed it down and my mash went crazy working…but my question is did it get too hot and can that harm something? I pitched my yeast at 80 degrees and poured my mash back and forth as they said to put air in the mix when we first started… but we sat it in the basement , kinda cool down there, 60 degrees, so we put a small heater 5 feet away and I guess it got the mix kinda hot. Question could I have ruined my batch…it seems to still be working like crazy after 24 hours…I used regular distillers yeast with aml …3 packs in 18 gal mash and 1 small pac of fleishmans yeast. All seems fine now the mash is at 85 degrees and working but did I do it any harm at those first 12 hours at higher temps?

    • Try to keeps your ferment temperature under 90 degrees F 65-80 is a safe range for me.
