I hope I figure it out before the new still gets here View

doing a lot from memory from helping dad so I do not know crap about ph levels;%of alcohol ;etc.just using spring water from the side of the mountain. can I work it again if it does not work off?

mash stopped working sooner than expected & I did not know the time frame on how quick u must run it > was not prepared > any way started out fine(high-proof first) but it went to crap in no time > pot temp never over 200 & column temp never over 180 > this was a test run so I did not expect much but my still will be shipped next week & I have a…[Read more]

Thanks it has been a week since I mashed & it is still working. Would you happen to know the basic’s on apple brandy ? I help Dad 50yrs.ago(only 1 time) using a 50gal barrel fill barrel 1/2 full with ground -up apples add water to finish filling( sugar optional) seems like we added yeast not sure & I do not remember how long to ferment.

    • ive only done fruit runs using liquor quick pot still yeast it has a pectic enzyme in it for ciders I just followed the recipe on the package. hbs sales it . as far as how long fermentation takes it done when its done you can tell this by using a hydrometer or by tasting the mash when its bitter and not sweet its done.

does it hurt or help if you stir the mash while fermenting?

    • I never stir after pitching yeast . could introduce bacteria.,

I forgot to ask does the diameter & length of the copper column matter I have a 2″ x 17″ 17 gal.pot. Bear with me I am learning & I had rather ask than mess up.

    • the bigger the colums dia. the faster it will run say 2 vs 3 vs 4” as far as length I have seen them up to 5 or 6 feet mikes the expert on stills give him a call at hillbilly stills mike , matt or jared can help you with that.

Thanks dooley 4 the reply. If I may ask you ask another ? do u gain any extra proof / flavor by tying / sacking your grain & running with the wash. Mash was rocking & rolling yesterday looking good.

    • you’ll get more flaver maybe but not higher proof but be careful doing that if using electric heat elemnts if any thing touches it it’ll burn up I don’t believe its worth it myself.

    • possum ive never run a thumper but from what ive read you can use some of the mash or water or even your tails from your last run in it. hope that helps.

    • yeah heat up slow. try going by drip rate more than temp with potstill you’ll find if you go with fast drips instead of a stream on small stills your temps will end up right.
