    Am trying a new recipe more a scotch whiskey then a american whiskey. First off I am changing several things water I normally use 6 gal this batch 5 gal sugar normally use 8 lb this batch 6 lb last normal grains 6 lb corn 2 lb malted barley this batch 5 lb peated or smoked barley 2 lb malted barley. Has anyone else tried a scotch recipe

    In reply to: dewman posted an update in the group Mash Recipes I use a 55 gallon barrel, 30.5 lbs of rye and 17.5 lbs of white corn meal, you want to heat your water ( about 12 gallons) to around 180 and maintain 165 degrees for atleast an hour and stir real good . then after an hour add 2.5 lbs of 6 row barley, I get my grains course ground , they seem to work better that way. then add 18 more gallons of hot water and let it set over night till the temp gets to around 100 degrees, then I stir again and add my yeast , I use fleischmans rapid rise the whole 4 ozs jar. I stir as often as I can seems to help for the first couple of days . about 3 days later I stir again for the last time. you want to make sure your mash stays about 75 to 80 degrees . takes about 14 to 16 days . I run in a 25 gallon pot still with a 5 gallon thumper. I added no sugar .I got about 3 gallon of good stuff. came out of the still about 150 proof and I proofed it down to 90 using distilled water to be good drinking shine. everyone that\'s tried it says it GREAT STUFF. hope I got it all in . View

    I would love to taste a all grain no sugar shine

    You can use brown sugar instead of white or use white and add 3/4 24 oz jars molasses

    • Ok thx peter. The feed I’m having mixed they told me I could get it wet as I wanted with the molasses. How wet should I get it?

    sweet feed is grain and molasses.brown sugar is cane sugar and molasses try replacing every pound of sugar you use with brown sugar it should give you the needed molasses

    try running several smaller runs 10 gal mix up the grains try adding some rye I run 6 gal 7.5 lb corn 2.5 lb rye 2.5 lb barley

The original was 110 proof the strawberry was 75 proof so beware doing this you will lose a lot of alcohol View

    I tried a strawberry it was all alcohol and not good tasting.I thought the drop was a lot to but the berrys filled about 1/3 of the jar

    I just did a second batch of strawberry shine after two days i strained then ate a strawberry high alcohol content so I proofed the original shine and the strawberry shine. The original was 110 proof the strawberry was 75 proof so beware doing this you will lose a lot of alcohol

    • pete id think the sugars from the strawberrys is causing your meter to read incorrectly it probably dropped in proof alittle but not that drastically just my opinion.

    I got mine at american still company I am sure you can find them many other places.Amazon Ebay beer sights and more.The light toasted chips give you a dry scotch flavor

    I am not a fan of all the shine recipes that are sweet.I did try something for a friend and it came out quite well.Dice 1/2 to 3/4 cup strawberries put in pint jar fill jar with shine.Now the online recipe said let sit for two weeks.I let it sit for two days shine turned pink strawberries turned white strain and drink.Not overly sweet mild…[Read more]

    try one to two grams dark toasted white oak wood chips per quart shine age till desired flavor

    • you may need to run it a little slower. speed will make lots of difference in your flavor

    • I feel that 12 lbs of sugar is way to much. I would be using 8 lbs.
