    I have a questions, I’m trying a a rye/corn maize blend for my mash. I’m using 13 lbs of malted rye, 8 lbs of corn maize, and 5 lbs of crushed 2 row in 10 gallons of water. What do you think the ABV of my mash will be? I know not high but I want a good grain flavor.

On day 7 I noticed it was fermenting again, not vigorously but you could tell it was. I\'m now on day 13 and its still going. How long can the mash sit before it spoils and can\'t be used? View

    • I meant to type I added a 5 pound bag of fresh ground cornmeal that I found.

    • leave it until it taste bitter. If it is sweet it is not finished working. It will work very hard for the first few days, then it will slow way down. if you can see any movement it is still working

    I am this time, just put it all in the fermentor and pitched yeast. I generally heat up my water to 160, add flaked maze and crushed malted barley. Cover it and let it sit for 3 hours and strain it out. Than I add the sugar. Once it gets down to 70 degrees I add yeast. This time I just put it all in fermentor and was going to strain when finished.…[Read more]

    I normally strain out the grains before fermenting. I got nervous and scooped it off. Hope I didn’t ruin it!

    • no its fine its the cap it’ll sink as the sugars converted.

      • I normally strain out the grains before fermenting. I got nervous and scooped it off. Hope I didn’t ruin it!

    • ok I assumed you were fermenting on the grain. not sure let it work off and see prob be ok.

    Well for some reason it cut the bottom of the picture off. I’m running about 170 proof right now. Strongest batch I’ve ever ran. Small batch, 8.5 pounds of Maize, 1.5 pounds crushed malted barley, and 5 pounds of dextrose in 5 gallons of water. Used turbo yeast.

    Im sitting right on about 204 degrees and 120 proof coming out, There is no steam but dripping slow. Low ABV in my mash so not expecting a lot out of it.

    • pot temp. I don’t use thermometer on colum on my pot still I go by drip rate ajust temp to where I’m getting drips not streams unles your doing a stripping run then streams ok.

    You were right, actually just under 13%. Going to distill it one day this week. I just upgraded my still, put a copper dome on it with 2″ pipe and a shotgun condenser. I scrubbed and sanitized and going to run a “stripper” run tomorrow. Already boiled water thru it. Had a few leaks but didn’t have enough bolts around the dome flange. Fixing that today!

    I did however make the same today but I added 5 lbs of dextrose which I got an OG of 1.095. I’ll see where it finishes and decide on the amount of dextrose for the next batch. Doing trial and error right now.

    • I did however make the same today but I added 5 lbs of dextrose which I got an OG of 1.095. I’ll see where it finishes and decide on the amount of dextrose for the next batch. Doing trial and error right now.

    • yeah 2lbs per gallon as a rule long as your og isn’t over 1.100 shouldn’t get any off taste .

I kept stirring it until it cooled to about 150 degrees f and I added about 4 tablespoons of Amylase Enzyme and kept stirring it at 150f for about an hour. It became thin obviously from the conversion. I put it in a 6 gallon fermentation bucket. I heated another 2 gallons of water to about 125 and added 12 pounds of plain sugar stirred until it all melted. I added it to the container. I then poured another 1 gallon of water in the bucket. Once to cooled to about 90 degrees F. I put 4 tablespoons of instant yeast in 4 tablespoons of water and added about 4 ounces of 100 degree f water and mixed it up. Once it doubled in size, I mixed in in the Mash. It started fermenting in about 45 minutes, had nice bubbling in my lock. 6 days later its still working. How long will it take to finish? I forgot to do the SP check prior to fermenting like a dummy but does the longer it takes to ferment mean it will have a high ETOH content? View

    • do a sp reading every 2 days when its 1.000 or lower its done also taste it if its bitter with no sweetness its done. fermentation time will vary according to temp. keep it between 75 and 80 from what I see your abv will be around 10 to 12 % really no way to know without your starting sp reading.
